甜枣蓉面糕 • Sticky Date Pudding!

过了立冬,感觉温度马上开始下降。还好,大衣,羽绒服,围巾都早已准备好,挂进衣柜里了。现在,早上做的第一件事,就是烧开水,泡茶喝(有时候Mr. Popsicle会很饿,所以有可能会先喂他)。 冬天有一种特殊的魔力,坐在家里有点冷的时候,会让我回忆到上大学的生活。Winter is officially here, and the temperature has suddenly dropped. Thankfully, I have already taken out my winter gear, and they're hanging and ready in my wardrobe. Now in the mornings, the first thing I do when I wake up is to boil water (Sometimes Mr. Popsicle gets fed first if he is really very hungry), and then make tea. There's something magic about winter, and that feeling of a slight chill sitting in my chair always makes me think of the days when I was at school.




以前念书的时候,下课就会去附近的咖啡馆里坐在,看书,聊天,消磨时间。然后就会点上一大杯热咖啡。在某一家咖啡馆,当天气开始转凉时,就会有甜枣蓉面糕。其实我去那家咖啡馆也应该不超过十次 (名字我也不是很记得了),但是我依然记得他们家的面糕,在它上面热热的奶油糖酱,以及冬天夕阳在他们二楼阳台照进来的颜色。When I was at university, we would go to the local cafes after class to read, chat, and just generally sit around. We would order large mugs of coffee, and when the weather turns cold, this one particular place would start serving sticky date pudding. To be honest, I don't think we went to that place all that many times (I can barely remember the name), but I still remember their pudding, with hot butter scotch sauce on top, and the setting sun shining in through their second-floor balcony, its colours as it reflects off the walls.




对我来说,冬天是吃安慰食物最佳的季节,而枣蓉面糕就是甜点中的安慰食物之一。它的味道能立马让我联想到冬天,戴着手套和帽子的那种温暖。我希望能与你们分享那样的感觉。For me, winter is the ultimate season for comfort food, and sticky date pudding is dessert version. The taste and thought of it can immediately make me think of winter, and the warm feeling of walking on the street wearing gloves and hats. A feeling that I would like to share with all of you.


食材 Ingredients:

枣糕 Sticky Date Pudding

250克

250g

已去核甜枣干 Pitted Sweet Dates

1茶勺

1 Tsp

小苏打

Baking Soda

375毫升

375mL

热水

Hot Water

125克

125g

黄油(需室温,请提早取出冰箱)

Butter (room temperature)

Eggs

1杯

1 Cup

红糖

Brown Sugar

1.75杯

1.75 Cups

低筋面粉

Plain Flour

1茶勺

1 Tsp

泡打粉

Baking Powder

1茶勺

1 Tsp

香草香精 (可以用香草荚)

Vanilla Essence (could also use 1 vanilla pod instead)

奶油糖酱 Butterscotch Sauce (!!!)

3/4杯

3/4 Cup

红糖

Brown Sugar

1杯

1 Cup

奶油

Whipping or Double Cream

香草荚(可用一茶勺香精替代)

Vanilla Pod (could use 1 tsp vanilla essence instead)


做法 Method:

1. 预热烤箱至180度。把甜枣干剁成小块(我这里忘记了,之后剁也可以),与小苏打放在一起,放入一个碗里,浇上热水,置放大约20分钟。Preheat the oven to 180, pit and chop up the dates. Add dates with baking soda into a bowl and pour hot water on top. Leave to sit for about 20 minutes.


2. 在搅拌器的碗里,先放入黄油与红糖,搅拌至均匀。然后把蛋一个,一个的加入,然后再置入香草香精、面粉与泡打粉,搅拌至均匀。如果没有搅拌器,可以手工搅拌,但是如果这样,室温的黄油更重要,要不很难搅拌均匀。Place butter and brown sugar into the mixer bowl, mix until even. Add eggs one by one, and then add vanilla, flour and baking powder, mix until even. You can do this by hand with a whisk, but make sure the butter is very soft, or it will be difficult to make it even.


3. 把枣干与泡着的水,一起倒入另外一个碗里,搅拌均匀。Now mix in the soaked dates and the water into the other bowl.


4. 把面糊倒入抹过油的模具里(任何形状都可以),放入烤箱烤30-40分钟,至竹签插入和取出时,没有面糊粘在上面。取出稍微冷却,然后就可以出模了。Pour batter into a greased baking tin (any shape will do), bake for 30-40 minutes or until a skewer inserted comes out clean. Take out, let it cool a little, and then remove from the mould.


5. 在等面糕烤的时候,可以开始做酱。While the pudding is baking, you can start to prepare the sauce.


6. 把香草荚里的籽取出,与酱的其他食材放入锅里,小火煮至均匀。Remove the seeds from the vanilla pod, and then add it with the rest of the ingredients into a pot, cook over low heat until everything is evenly mixed.


然后就可以吃啦!Then EAT!
